Cooking Adventures: Fried Sweet Potatoes

I decided it was time to use up the sweet potatoe that has been sitting in a bowl on our counter for about a month. It wasn't looking like mold or squishy, but was starting to get a few sprouts. I was inspired by something my mom used to make, and a recipe I found online. I made 'fried'/simmered sweet potato slices in brown sugar, butter, and water. They turned out really good.
